I like chicken fajitas. They are too easy to make, ideal for a dinner or to meet with friends and prepare something "self-service" different from a homemade pizza.


The trick of this recipe for chicken fajitas is to make a good guacamole, and prepare the chicken strips at their exact point. That they are slightly crispy on the outside but not dry, rather juicy, on the inside.

I recommend that when you saute the vegetables, you do them separately, this way you control the exact cooking of each one. In the case of hot pepper, if you want to use it, skip it very quickly, just give it a heat stroke and that's it.

Recipe for making Mexican Chicken Fajitas
Fajitas ingredients:

1 large chicken breast
1 medium onion
Half red pepper
1 Peruvian hot pepper (or the one you prefer, or none if you do not want spicy)
1 medium tomato
Various branches of coriander
Salt, pepper and a touch of paprika for the chicken
Half lemon
1 package of wheat tortillas (you get them in supermarkets)
Guacamole ingredients:

1 small avocado
Half lemon
a pinch of salt
Preparation of guacamole:

Open the avocado, remove the skin and chop it into medium pieces. Put it in a deep bowl and using a fork, mash it until mashed. Add a stream of lemon and a pinch of salt. Mix well and reserve.

Fajitas preparation:

First chop the onion, pepper, tomato and hot pepper in julienne strips (long strips). Chop the chicken also in strips.


Season the chicken with salt, pepper and a touch of paprika.

... in that same pan, even at high heat, add another spoonful of oil and cook the chicken strips until golden brown on both sides. The idea is to leave a slightly crusty layer on the outside and juicy on the inside.
